Well there was a new system for the armor value rolling maybe that makes the armor detection failed. Just wait and keep hunting and wait for the update. You may keep yourself away from 1-shot as you have 650+ armor. Also cooked fish keeps your health regen.
Defense is not the Problem, but I'd like to improve my resistances without having to take dangos for it.
BUT! Update is out! editor is working again.

SHORT NOTE:
The Editor will not notice the changes from the augmention, so just take note of the missing stats and change them as you need it. the editor does not recognize the changes via augmentation, but it still works just as fine as it should.

I would hope so. They don't design these types to be actively online.

You >can< also use it while in online-mode, but you >should not<. specially if you are in a group with other players, since it may ruin the experience of the game for others. And That is the point.
You could get excluded from playing online, if other players report you to capcom.
They won't exactly "ban" you, but they will exclude you from the online-play, if you use trainer, cheats or mods that ruins the experience for other players.
Capcom won't do anything that is just changing YOUR OWN experience. It's not welcome, but they let you do it.
For example: Manipulating your Damage while in Group will ruin the experience for other players -> if reported, results in exclusion from online-play. Same goes for changing resistances or defense over extend.
If you use the trainer just to increase your damage slightly or your increase your defense just a bit, as long a no one will notice, it does not affect the other's gameplay and will not be handled by Capcom.
The same goes for Mods. Changing Layers or Client-Sided information, Capcom won't do anything - as long as it does not affect the game for other players - like changing or manipulating anomlay-quests.
There was a statement from Capcom about 3 or 4 Weeks ago, where they stated, that they will handle anomaly-manipulation.
In the same article they stated, in which cases they will act and in which not and what makes the difference.
Also, there are even some mods they don't support, but appreciate modder's work for them, like changing designs of Armours.
Sadly, such mods can only be seen for the player that uses it. Only Client-Sided changes.

TL-DR
You CAN use it online, but you'd better not. I highly recommend: better not taking the risk.
IF you do, don't overdo it and don't ruin other players experience.
As long as you don't do to much and don't get reportet because no one notes the changes, It's more or less safe to use.
Best way is, use the trainer while offline and go into online-mode AFTER the changes.
The changes will stay, as long as you don't restart the game.
But, as I said - be careful on doing so.
