Because..

1. It is set in the middle east

2. Altair is being controlled in the mind of an American from the future via the memory machine.

technicly speaking the game character isn't controlling altair or however you spell his name he is only viewing it without the gameplay of you being altair the the game woult suck.
so there is no reason for him to speak a perfect american english accent.
