Return is Snorlax's best attack (at max it has an attack power of 102 before STAB [153 after])

In general Smogon have the best move sets for Pokemon your not sure on how to use.

and then i'll switch my return with fire punch i wana see how he works with with my chosen moveset

Fire Punch will only do more damage than Return against steel and ghost types (since Return does more than twice as much normally).
Earthquake is stronger than Fire Punch against most Steel Pokemon however Fire Punch will be stronger against Scizor, Forretress, Bronzong and Skarmory.

Sweepers usually work by using their most powerful STAB moves as a main attack and then use a second move to hit what ever resists their STAB Super Effective.
Snorlax uses Return as a main attack and uses Crunch for Ghosts and Earthquake/ Fire Punch for Steel types (Earthquake will also hit most Rock Pokemon).

i will double check my team to see about the list of the uber pokemon that you listed.

He is a uber That's why you can't use him in your gym

Uber Pokemon are basically Pokemon that are too powerful and create an imbalance in the game.
Garchomp is in the Uber tier because the only Pokemon that resist its STAB attacks are Skarmory and Bronzong.
Skarmory is easily 2HKOed by Flame-Thrower/ Fire-Blast and Bronzong is Swords Dance bait.
All other pokemon in the game are OHKOed or THKOed after a Swords Dance.
Garchomp can get a Swords Dance easily because an Ice attack will not OHKO if it has a Yache berry.
