I've got problems in the mission where it is always winter and I have to help the Vikings finding sheep and getting stuff from a hut. First of all I can find just 5 sheep, where are the others? The hut is well guarded by wolves and I can't build any army because I have no iron mines all around. Last but not least the settlers need mead but beehives produce nothing in winter! Well I can't trade as well. What can I do?

I'm not sure which mission you're on about but if it's the 1 that I think it is, you'll first have to build a tower in the South-East section of the map. I think a village has requested that you help them gather wood, you'll then be able to trade with them. Also, before building sufficiant logging facilities there, I'd build ironing mines there to get all the iron out for free first.
It's been a while since I've played Settlers since the 1st proper trainer didn't work all that well (made the game crash) and I might be wrong about the whole thing.

I think you get one batallion of swordmen at the start, so you can use those troops to fight any wolves or just have them protect your knight throughout this mission.
Even if those troops die, you can send your knight against any wolves. Even if the knight gets defeated, you can get it again at the castle (after a little delay, while it heals). The wolves you already killed will still be dead and you can finish off the rest of the wolves, even if it takes your knight several bouts against them.
As far as the sheep, You need to explore all the unexplored territories. The sheep are out there.
Now, for the bees--I was stuck here, too!!!
Summer will come eventually, believe it or not. You need to concentrate on other resources, first. There will be a "quest" asking you to send 18 woven tunics to one of your trading partners. Once you do this, another "quest" has you smoking two bears out of a cave. Do these quests and eventually Summer will come. Have your Bee-keeper's buildings and hives ready.
