I use the Pagani Zonda F for grip also, along with the Lancer EVO X. How's the EVO in speed, I never tried anything but my Zonda which is too twitchy and my Lamborghini LP640 which is amazingly stable.

Evo is very, very stable in speed races, but when I had it, even with some of my tuning, it wouldn't go over 360km/h (around 220mph). It's a bit rubbish, and if you go close to the top speed and go over a small jump, it will fly in the air. Low speeds (0-180mph), it's stable. Anything above 180 and it starts to jitter.
Upon finishing the game, here's my new and improved car list:
Grip - Porsche 911 Turbo/Pagani Zonda F (backup) Drag - Shelby GT500/Dodge Charger (wheelies) Drift - Aki Kimura's RX-7/BMW Z4 M Coupe (backup) Speed - Lamborghini Murcielago LP640/Audi RS4 (backup)

My LP640 does the same thing on hills, I usually slow down for them because the landings are rarely smooth and frequently lead to disaster.

The EVO is great for for speed in my opinion. It handles well at high speeds but the down side is as you said, it fly over hilss. That was annoying when trying to beat ryo.

Really? Mine stays stable until 220mph. Then it jitters. And then I total it.

but i think the hardest track 2 keep ur car stable is the Nevada Highway speed races... lots of hills & blind turns but quite easy once u get the hang of it... most of my totals were frm there
