If I wanted to use the trainer to help me beat a boss in offline mode, could I go back to online mode after I used the trainer and stopped using it? Meaning I would not activate the trainer, remove the "Start protected file" and try going online.

Any character or save you used the trainer on would count as cheating online from the fact so you would have to separate the two from each other.
To those having issues with the 1.10 trainer after the Elden Ring update 1.10.1. It does work. You have to update the attachment as the new update just updated their Easy Anti-Cheat software to support the Steam OS update. If you can't find it, then go to Trainer Settings and then click on the Show/Hide Trainer Attachments button.
