Is there a way to unlock the cosmetic armor, weapon, mount, ship, raven sets that are in the Uplay store sold for Helix coins or whatever?

Yes, buy the server side currency from Ubisoft and unlock with those. Any other way may result in a ban and could draw the eye's of Ubisoft's lawyers to CH, Best case or at the very least would just be a retired trainer. When your top dog, they always look to make an example. Even if there is a way, we won't do it here.
