is there any way to bypass the mini games, I can't get the rhythm down for the drinking nor the dice.

Yea I hear ya.... Total rubish and shouldnt be used as story progression.
for some reason I dont get the silly dice game.

I quite enjoy the dice game, to the point I'd probably buy the physical version when Ubisoft release it next year.
What I can't get on board with is the sodding stacking stones. The physics and controls are just dire

Are these minigames used as something that stands in the way of progression? Or is it just side stuff/achievements?

From what I have read thus far, it is both. Ubisoft luvs their (sometimes nonsense) filler content to make the game longer.
