You can dodge people's attacks and counter right after you dodge. It's a pretty powerful punch and people can only survive two of them.
I have the XBOX 360 version so I don't know your controls . . . BUT if you tap the button that you use to run (XBOX 360 A Button) when your opponent is swinging you'll dodge the punch but it has to be timed perfectly. Then press the normal attack button (XBOX 360 B Button) repeatedly and Niko will punch your enemy a bunch of times.

oh I see now. on playstation u lock on with L2 <---(i think) and you push x to block, square to kick, triangle for power punch, and o for regular punch. Also i didn't find this out until like two week after I played the game but you can pick up stuff people drop like phones and coffe cups,or go into places and pick up certain food and drinks by holding L1 but it you tap it and your by a taxi your ganna whistle, its fun to throw peoples stuff back at them

Well there is no way to disarm unless you are thinking of the game mgs4.
Wrong.
When you go on your first date with Michelle, Roman calls you for help from some loan sharks. When you kill the two guys beating him you chase a guy to the docks area where you have to fight him. He has a knife and the on screen tips tell you how to disarm him and take his knife.
