No auto-level increase based on stats or soul memory anymore that I can see. Which will make it easier for hackers to grief lower level players, but it will also make it much easier for playthrough+ and beyond assuming they keep the same method they used in 1 and 2.

Does that mean you can add souls without getting soft banned now?
Just going to throw my own two cents in here; you don't actually need to use the add souls option, I would recommend that as soon as you get a boss-soul, go into inventory page, activate max flask/items option and CONSUME.. yes, use a boss soul, if you did it correctly, you will now have 99 of them, which can sell for 10-30k souls per boss soul, and you can sell them in bulk to the item merchant (just make sure to save 1-2 so you can repeat as needed) its a much faster way to get souls once you have a few boss souls stocked up, AND you don't have to worry about not having boss souls over for special weapons or spells.

You can also "pop" the normal souls you collect through out the game (hero souls, wandering souls, fading souls, etc)
and by doing the same thing stated above, making sure the option is on, you can pop them in full stacks and never run out.
the bigger the souls the more you get as well.
and if that is not enough for you, note that while that option is turned on, you can sell things and they never leave your inventory, so you don't have to worry about selling a whole stack, just sell away.
special note, if you are worried the option might not work, or forget if it is on or off, just open your inventory, select the item you want to dupe/inf use, and "leave" it. If the item stack doesn't change (or maxes out) and you don't actually leave anything, it is on. If not, you can just pick it back up and turn the option on and verify again.
