I've used Wikipedia for every single project I've ever done. I'm done my third year of university, I still use it, it's never steered my wrong.
Teachers hate it because it makes research stupid easy, not that they'd admit to that.

--------------------------------------------------------------------------- I don't want a big car, particularly. I have no need for acreage, and I don't like the fuel bills. But I don't want a small one because they're all like supermarket own-brand cola: weedy imitations of the real thing - Jeremy Clarkson
Most of them claim to hate it because anyone can make changes. But of course, anyone can make changes. After you've created an account. And once you create an account, you can be blocked form editing or even banned, and then they block your IP address from making further changes. Not only that, but all changes made to any article are moderated. If it's an obvious vandalism change, it's undone very quickly.

As Thrawn said, it's really a knee-jerk reaction to the whole "anyone can make changes" thing. They don't do any research into the matter, they just ban it.
It's not that hard to bypass the rules, though. All you have to do is not write "Wikipedia" as your source.
