Hit the key above the tab key to enter cheat screen, then type:

player.additem 4e940 100 -enter-

This will result in 100 nirnroots being placed in your inventory.

If you want more or less, just change the second number. The first number: 4e940 or more properly 0004e940, is the code for a nirnroot.
