for me none where the hardest for the simple fact that i collect the little lizards for strength and the fruit for health. that way it was easier for me throughout the whole game to beat all of them without any problems.

Easiest was the first one of course. I had an insane time with the eleventh colossus though. It was the only one I didn't understand how to defeat right away.
