This is different for each game. But to give you an idea:
1. Find your coordinates of your character (mostly FLOAT value) 2. Find out what WRITES to it (debugger) 3. Nuke the function alias replace it with nothing (NOPs) 4. Write a script that changes he coordinates of your characters on key press. So that when you press X it increases your Z coordinate by +5 which makes your character fly upward (depends on the game, could also be -5).
On complex games nuking the function could cause issues as it's probably shared with other objects / NPCs.

Btw, the coordinate in 3D games contains X, Y and Z (in 2D its only X and Y) so there are 3 float values to find. Obviously you must also nuke all functions for X,Y and Z. Sometimes its also enough just nuking the function that writes to the Z (height).
It can be really tricky to achieve and depends a lot on the game. Good luck!
