What a joke this game has become. I really hate that STEAM sells out to these game manufactures and puts forced updates instead of looking out for its CUSTOMERS and let us have control over our game.

You can turn off auto-updates. Stop being a baby.

First off with the name calling, text tough guy! Second, I can not. All I am able to do is select to update when launched, auto update, or High Priority always update first. So tough guy, how is it done?

There are multiple guides on the internet, but specifically:

right click Europa in your steam list
go down to properties
then to the beta tab
and choose the patch number you want to stay at in the dropdown box

Easy once you know how.
