All characters and courses:
At the title screen, hold L1 + L2 + R1 + R2 and press Up, Up, Down, Up, Left, Right, Right, Left, Left on controller 2.

Mirror Courses:
At the Course Selection screen, hightlight the course, hold L1 + L2 and press X.

Change the clothes color of main menu girl:
At the title screen, press Triangle + Square + X.
