How did the zombies get into the mall's doors if the outside ones were locked? And at that, how did so many get into the mall when the doors open when there were only like 20 inside the doors?

If you really must know, they got through the door in the front at the beginning of the game. as to how they got on the roof and some other random places is unlikely, its a game, so just showing how they got in first is good enough.
