I have the PC version. My processor doesn't even meet the minimum specs and it still works brilliantly, even with the graphics up high. Your setup should have no problems at all.
I've checked out a lot of forums about bugs and crashes involving Fallout and though they share many of them, the 360 version actually has a couple more. In addition, the PC version has workarounds where the 360 doesn't. If bugs are your concern, go for the PC.

I'd choose the PC version aswell, due to the following: -The game would work fine with your specs -There's no need to worry about the bugs (nor the glitches), because the game is stable enough and autosaves very often. I still use the 1.0 version. The developers will also release patches for it too. -It's easier to aim with your mouse if you prefer not to use the VATS system -There's alot of mods already out for this game that changes things that players didn't like about it (like the silly ending after the main quest) -Both the PC and Xbos360 have achievements -Let's not forget about the awesome trainers here in cheathappens!
