Cast Bio or get Rikku out and use an Item that causes poison. Get out Tidus, Wakka and Yuna. If Yuna has Aeons with overdrives, get them out and use it, but you only have one shot with the Aeon. Now keep killing that machina thats helping seymore. Have yuna cast dispel (if you have it) if seymore casts protective spells. The machina will drain seymore dry of HP, so have Yuna switch with Lulu to make this go faster. Also, have Tidus cast haste on everyone. Have Tidus heal and cure people of status ailments. When the bot is down, switch lulu with auron and have everyone attack seymore until the machina revives, then kill him again. With that and poison, he should die fairly quickly.
If thats still too hard, you haven't been training enough. there are lots of guards before you reach seymores second form, so train up.

Hit the other guy first because he sucks health from Seymour. Cast reflect on all party members (it´s useful to have Kimhari as a white mage!). Summon only if Yuna or the aeon in question has a full overdrive gauge. After his health reaches less than a third it gets tricky (like it already wasn´t) so hack at him ´til he calls it a day.
After all the trouble he caused I was glad for this battle! I reloaded just to hack away at that miserable guado the useles mother !
