as far as i know the car you choose for free at start is the one deciding what cars youll unlock. so i think you may need to start all over again

No it wont. You will still unlock all the exotics and only a minority of the muscles and tuners. Once you start with a class, it doesnt matter if you change ur car 1000 times. You will remain the "class" you started with.
