Open ge3.ini in the Gothic3/Ini folder and change the following line:
[Game]
TestMode=false <- Change this to true.
In the game you can now take down the console with the ~ key and more or less do anything with it but here's a few starter commands.
God - godmode
Invisibility - invisible to enemies
idkfa - displays a message
Teach all - learn all skills, lowered my stats to 0 though
Give - give the specified item
Spawn - spawns the specified item/creature/character
Kill - kills the target
There's a LOT more commands but those should help for now.
(Begin typing a command and press tab to see similar commands and you'll see how many there are)
There's also a editor and other stuff in the console but I haven't tested those yet.
And teach do seems to fubar stats ..
God - Standard godmode cheat.
(as usual with godmode, health won't decrease and you won't die)
Invisibility - Turns the player invisible to everyone else.
(Can still be seen when talking to NPC's or stealing)
Teach - Teaches a specific skill
(Needs a value after it or skill will be set to 0)
Teach all - teaches all skills and stats but also needs a value or everything turns to zero.
Give - gives a specific item but I have not been able to find any item codes. (Tried all sorts of item names)
Give all - gives all items can set a number to recieve more than one item. (Wish I knew the individual item ID's)
Spawn - spawns the selected entity
(Usually type Spawn "letter" and press tab to cycle all avaivible spawns with that word or letter)
Kill - Kills the target.
(Completetly kills target, use with care)
IDKFA - shows a bravo message but also gives all items and skills, probably needs a number behind it to avoid the zero skills and stats problem.
Goto - teleport to a specific target.
(Usually a NPC such as "Goto Otis" - to get NPC names check the spawn trick above)
If you don't want to edit the INI file you can also type Marvin anywhere in the game to enable the same console and debug keys. (Marvin mode activated command prompt shown)
The console is capable of doing nearly anything and for a list of commands open the "keyboard_and_console.txt" in the Gothic3/INI directory.
That file also has a description of all commands and their effect on the game. (The "Something you should not use" descriptions are the common cheat commands)

Good list though and not hard to understand at all.

Savegame only taken directly at the start of the game WITH the 1.0.7 patch installed. (Original game is version 1.0.4 and 1.0.7 is the first patch downloaded with kupdate.exe in the game directory or from the net somewhere)
You may also want to open the intro.bik with RadVideoTools/BinkSmacker to see how the game starts.
(Could also delete the logo videos to remove them or even rename the intro to one of the logo videos)
