What hidden race do you mean? I've finished the game 100%, and only hidden races are the ones when some dude calls and tells me where to go(it doesn't show on the map) so you need to listen to what he is saying.
There are also the races you can only be a part when you are driving a Hummer,Cadilac and the third one...I don't remember.
