Random battles have always scaled with your highest level character, its the Story battles that gradually get higher.
You can lower the difficulty, if you have not done so.
You can also use CoSMOS to edit your Gold if you want for better items, its value is 4 Byte and easy to modify.
JP/HP/EXP/MP on the other hand is a bit more difficult, so you'll have to wait for that. BUT i can say that JP modified in battle is shared by ALL Units to an extent, not just the one being edited, so that makes it easier to buy abilities for everyone. I was only able to modify a couple myself.
But yeah, be more careful
You can escape battles though, just select return to main map, or simply dont enter random battles, they are not mandatory in the Enhanced version.

I'm a patient man, I don't mind waiting on the trainer but I appreciate the reply fam.
If you grinded too high, go to the Zeklaus Desert, find the de-level trap panel, and have your characters repeatedly step on it. It will de-level you so you're back to a manageable level. Be careful with stats as level up and down are impacted by the job you are.
