The savefiles are in plaintext, so you can open them in your favourite editor. They are in %AppData%/LocalLow/ZAUM Studio/Disco Elysium/SaveGames and the relevant file is the 2nd one in the archive. But yeah, freezing time would be extremely convenient. I like to take my time exploring without timer breathing on my neck.
Only played for a short time but this feels like strong GOTY candidate.
