The Alpha 10 patch added offline support.

I haven't personally tested if it works "unplugged" but several forum post at the time said it did and the request for a mode that doesn't require an internet connection have stopped so I'm assuming it does.

Thanks Criel. PWiz has added the game back to the Request list.
I'd like to put a vote towards 7 Days to Die, now that it has single player support I'd love to try it out with a trainer.
