Most options that I've tried seem to work fine, but while "Unlimited Tool/Gun" appears to work for the Mining Beam, it doesn't seem to affect the Terrain Manipulator, which still depletes as normal.
I tried activating the other options (no reheat, no reload, unlimited ammo) just in case but none of those affected it either (as expected).
there is an extra Option called "Unlimited Terrain Manipulator"

As Zaziki replied, there's an option at the bottom of the list just for terrain manipulator. It was added later to the game than most other things and thus also later to the trainer I believe.
As for version, unfortunately it's only possible by cross referencing timestamps of the update posts with the "date modified" in properties of the .exe...

also why was the Max Slots option removed from the trainer?

Try using NMS Save Game editor, you can get 80 slots for all inventories.
You have to do each individually, but it's worth it.

because the engine is new, the trainer is new, i cannot replicate the old options in all cases, and the developers reworked many things that the game does. we had to rebuild this entire trainer from scratch pretty much.

The Ship inventory is still tripping up with codes activated..
GOG Galaxy Version 1.52 (I'm not enrolled in experimental builds either)
I can send someone on the CH staff my save file if needed to resolve this issue quicker.
I cannot replicate your issue here. Before we updated the trainer recently, the ammo option was the culprit. I see you are using save game editors or mods, so I have no idea what those may or may not have done to your game or how they clash with our trainer options..
