How do you assign tasks to people ie taking care of food, manning artillery at the castle Any help would be greatly appreciated.

Well, for example, to assign artillery or food crops, start the crafting then click on one of your settlers that's not assigned a task. Then point to a nearby crop or artillery and click it. If the settler accepts, it will say so above them. They usually accept, but sometimes you have to repeat the action. Also, when looking at a settler with Crafting open, there's a menu below them that has commands.

Be sure and assign some to the stores as it helps keep the settlement happy. Takes a little tinkering but it's pretty straight forward to get things going. There are a lot of videos at YouTube with plenty more details such as this one:
