The definition of "unforeseen" precludes anyone from giving you an accurate answer to your question, I'm afraid. If we could somehow predict the unforeseen, I think how videogame trainers might work would be much lower on the list than other things, since it'd be granting us a form of omniscience...
... In other words, nobody can tell you, but if you feel uncomfortable using it, don't use it. If you're worried that software is still watching you after you've been online - and isn't it a shame that we're playing games that can watch us like that? I think it is... But a strange age we game in, I guess - then if you have been online, turn it off first. Block it in your firewall or shut off the internet and use a local authorization key. Take measures as extreme as you like. I've never found them to be necessary and it doesn't sound like you actually have, either, you're just sort of out of the blue worried about something that didn't used to worry you. I dunno what to say to help with that.
Don't use trainers with VAC protected games that don't have a single player component, like Dark Souls II, without making absolutely sure they're in Offline mode? I don't know what to say... You're choosing to cheat, try not to cheat in such a way as it harms others' gaming experiences (no online cheating! makes us all look terrible!), and take precautions that you don't harm your own (no VAC games, etc.) and that's the most certainty anyone can offer you. It is not 100%. But live a little, haha, it'll be alright.
