Is there a genre of game that is harder / easier to write a trainer for than others?
Were there any particular titles that were especially challenging to write trainers for? (ie, "oh gawd, not this one again . . ."

Easy to write a trainer for? AAA titles (No code generated on the fly. MOST of them receive less than 10 updates), and most of all shooting games because you don't need to play an endless tutorial or to unlock something. Just saves so time.
About your second question: Early access, games based on Unity Engine. There are not difficult, they're just 90% of the time purely annoying.
But there is nothing, really nothing more annoying as game where the developers changed the code on every f... patch and you need to start from scratch.
