the witcher 1 or 2
Definitely!
I would also suggest the Drakensang series, Gothic series, Neverwinter nights, and perhaps even the Two Worlds series (although I have not played those both through... they simply fit the genre).
I would also add the Dragon Age series.

The two Worlds series are a real good choice and not expensive these days, and you should enjoy the game, good long playing time..

This. Also have you tried the Gothic series? They're buggy but still pretty enjoyable for RPG gamers.
You can also try your hands on Risen. The first one is much better than the second one.

With the dodge/better blocking patched in, I actually favor Risen 2 over the first game at this point - though neither is quite as good as their progenitor Gothic 3 with the fan made patch/mod content.
Two of my own suggestions would be:
Din's Curse, which is basically an infinite number of smaller, randomly generated dungeons, complete with towns that have NPCs, monsters that level, and even monster invasions! (plus some great multiclassing) It doesn't have a "main" quest aside from stopping each town from getting blown to hell by the boss monsters before you finish the quests, but it's great fun, especially if you would rather dictate how much time each world with take when you generate it than be stuck with less/more time required to finish than you'd like: Link
Torchlight, basically the same as above, but with a linear storyline and more restrictive "random" generation (items, quest rewards, monsters/bosses, area layouts, etc) but some other neat gimmicks and an actual overarching plot: Link
