I just downloaded the demo and I'm getting killed left and right. My health is not regenerating no matter how many orks I kill.
You need to stun orks (key F) to make them vulnerable to execution (key E). You'll see an icon over a vulnerable ork.
You may be still attacked while performing an Execution. Depending on your melee weapon, there are an assortment of different stuns. Typically Melee, Melee, Melee, Stun will be an AoE stun so you can Execute in relative peace.
Also Space Bar will let you roll and evade, I've yet to kill one of the big orks without Fury.
I've tried with keyboard+mouse and xbox controller and so far I'm preferring the keyboard+mouse

Okay, have managed to kill a big ork (Nob) without Fury. The highest chainsword stun (Melee,Melee,Melee,Stun) will stun a Nob for you to try to execute him, but you have to hammer on the left mouse button (of all things) to complete the execute or he will perform a smash on you instead.
Just played through Inquisitor with only using Fury once (two nobs by the lift) on normal.
I'm really liking this game.
One Nob execute had Titus ripping the Nob's jaw from his head!
What does hammering on the left mouse button do when you're fighting a nob?
