You are confusing Altaïr from the first game with Ezio.
Wait...Altair was missing his ring finger? How did I never notice this? Totally explains the cutting off the finger scene in AC2 though...figured I was missing a reference to something...
If you have the digital deluxe version of AC:B, you get a Codex written by Altair. He explains the removal of the ring finger. As far as I can remember, you never actually see it happen in AC.
Opinions on it are split though; some believe it's a sign of honour in the order, others that it's removed to facilitate easier use of the hidden blade.

Which is exactly why in AC2 that Leonardo DaVinci jokingly attempts to remove Ezio's ring finger when the hidden blade is repaired. It's a reference to the "Old" model before Altair made the modifications to it, and the post-modification model adapted and built from Altair's schematics and DaVinci's ingenious crafting skills.
