Why are all the Stuff on this Game Unlimited Only?

The game itself has just been released, so I suggest either get Unlimited membership or wait until game gets patched and new trainer comes so the older goes for everyone, though older trainers may still stay as Unlimited only.

Also if I remember right more older the game becomes more of those trainers may become accessible for everyone.

Errr ... not really, except for the save game nothing is going to be released for free members.
