Well nutz, I was about to use the trainer specifically for Unlimited Stamina.

A) Open Steam. On the top left corner, choose the option to go offline
B) Download an offline version of the trainer that matches the version of your game (make sure you have a key)
C) Manually turn off WiFi (bottom right corner of Windows)

Just turn game manifest in steam folder to read only. There is even a guide on steam.
