Best plane is Bearcat upgraded or Black Widow if you are for some Real DOG FIGHT. Other wise if you are fly-by player use german jet plane with 6 cannons. There are some mods and patches wich allow you to use modern planes wich enemy has too, but cool thing is to knock out bomber from 6 000 ft distance with seeking missiles and fly faster than german jets (up to 1000 MPH, good if you are used to flying fast and low wich is not recommended by ME Ground Crashes) FLY HIGH.
