As a requirement, we have to learn Spanish and French in the school I go to, and it's not too hard. And since Italian is close to both of those languages, it can't be too hard.
I am currently trying to learn Japanese, as I think it is one of the most amazing languages in the world. It hasn't been too hard to learn Japanese.
Polish? I'm part Polish, Dutch, Italian, Irish, and English. I don't know much Chinese, and that's why I'm going with what I voted for.

Hebrew is easy, maybe I say that because it's close to Arabic, I heard Arabic is hard to learn for foreign people, I'd go with Japanese from that list.

I actually judged from characters and Animes. LOL
If you watch enough anime with english subtitles, you pick it up a lot quicker. A former friend of mine is something of a linguist, and she said it's one of the easiest languages she's learned, and a lot easier than German.

It's better to watch it through completely raw (no subtitles) first before using subtitles. Try to figure out what's going on first and see if you're right (plus it helps you focus more on pronunciation and grammatical structure as well as slang, tone, and dialects.)

I have to go with Chinese Mandarin even though it is not really the hardest language to learn but its just so foreign to me that its the hardest to me.
I thought Latin is the hardest language to learn as it on the verge of extinction. Though I wouldn't mind learning. The more you learn any language, the more your brain will become strong.
