If a man is gay, it means he is attracted to other men. Why then, do a substantial proportion of gay men act like girls? Surely that defeats the nature of their sexual preference.
Well my gay friend told me there is always a girl and a boy in gay relationships. By that he does not mean literally - But on nature. One is soft and the other is protective about his partner.
So its all like normal relationships, but it has a guy instead of a gal.

Your gay friend is probably speaking in only his own preference and experience.
With me and Wuffie, we're both very affectionate, and yet very protective of each other. Neither of us are all that "soft", nor are we overly "rough" either.
Neither of us act girly either.
The stereotypes are strange, but far from the norm. It's like saying Brits never brush their teeth or that Canadians can eat their weight in Donuts, moose meat, and Kraft macaroni and cheese in the span of a few days. Sure it may be possible once in a while, but it's hardly commonplace.

We've all got the same hormones, actually. Just in different levels.

And some who have more girl hormones (Y chromosomes?), they don't just behave like girls, but look like girls too.
Chromosomes are not the same as hormones. Hormones control how look, act, etc., etc. after we're born. Chromosomes say what we'll look like before we're born.

Probably got mixed up a little. I had watched a whole program some years ago based in this topic, they also covered gays.
