You can both pack and unpack saved games for the gold edition while in the game's control panel. If you go to Settings, in the upper right hand corner, there are two buttons. One says "Unpack saves," the other says "repack saves." Then you exit the game and use a text editor as described in the cheat guide here. After making your changes, go back into the game, and repack the saved game file.
