Are you sent into character creation when you load a save or are you stuck with what you chose in your ME 1 save?

You can change the look of your ME1 character.

After you load your ME1 save, you'll have to play a few minutes with a helmet on. After that part, you'll be able to completely change everything about your ME1 character.
