EV training is when you train a pokemon in specific areas specially by fighting certain types of pokemon.

every pokemon gives a certain boost to your "Effort Value" (EV)

a pokemon can have a maximum of 510 EV's overall and a max of 255 in any one stat.

every time a pokemon defeats another pokemon (non PVP) it gains an effort point from that pokemon so EV training happens before you battle anything else. once you have your max 510 EV's spread wherever you cannot gain anymore and fighting pokemon will no longer yield EV's. unless you use special berries to lower EV points.

the whole point of EV training is for competitive battle only, since you can basically win anything in game without EV training.
    :)
