I think a sport needs to be team-based, have codified rules governed by a central officiating body and be played by more than a niche community in a limited area.
So, by these qualifications, paintball is a sport. It's team-based, has a governing body and is fairly wide-spread.
But the game you made up that one summer called "Bleep-Bloop" and six people know about it is not.

But it's still not really a sport any more than when you were a kid and you and your brother shot BB's at each other.

So would you all consider Snowboarding or skiing a sport? It has even less of the qualifications but are in the olympics and have numerous tournaments.
Curling and discus are also in the Olympics and have numerous tournaments, but I don't think they're sports at all.
Curling is fun, though. Both to play and to watch.
