how do you kill the giant ape in the church I've tried everything I can think of

First, if you haven't already, shoot 10 of the concrete blocks he throws at you in the beginning for the achievement.
Now, to kill him:
Use the glaive and grab some fire. Toss the glaive at him while he's hopping around on the pillars. Eventually he'll come down. Hit him with the glaive some more (with fire) or shoot him and he'll start glowing red, run up and do the "finisher" on him. You'll have to do it about 3 times. Next he'll just start charging back and forth trying to smash you. Just keep dodging him and shooting him with a shotgun or, if you haven't got a shotgun tossing a flaming glaive at him when you can should do the trick. He'll die eventually. The last part takes a while and will seem like it's not doing anything but he'll eventually go down.
