IIRC the best place is the second bridge in the sky island mine, the un-dead don't stop coming until a ridiculous number.
Yes, healing magic/ items will only hurt the un-dead.

Each Gambit is based on three parts:
What to use : Condition on when to use it : Target to use it on
Example:
Cura : HP < 50% : Any
The above will make the character use Cura on any character with less than half of their health left.
Gambits will work from top to bottom.
Cura : HP < 50% : Any Attack : Always : Any
The above set up on one character will use Cura on a character with less than %50 HP and will only attack an opponent when all of your characters are at or above 50% HP (the top will always have the most priority).
A gambit will only be used if there is a target, you have the requirements to use the move (enough MP to use Cura) and the condition is right.
From memory Cura will target a group but consumes a lot of MP, I suggest getting Curaga before taking on the un-dead (it targets a single target but heals a lot more and doesn't cost as much MP).

From memory, the bird is weak against the Dark element and is prone to Blind.
There is a quest in the desert before the boss you'll get an item, it'll do decent damage to the bird.
It has been about a year since the last time i played this game, so the details may be off: IIRC you need to find a friendly enemy in the north east corner, whom will then ask you to kill a monster in the middle of the map, then you need to go back to the friendly monster to get the item.
