To answer the first question, yeah it's because of steam and because it's a demo. Steam is crap IMO and I am dissapointed that they went with them but oh well.
For the last question it's not your PC, it's laggy starting up for everybody. Everybody I know who has tried the demo has had the exactly same thing. Even people with killer gamer PC's.
I think they just took something out of something and slapped it together to make a quick demo. It kinda looks like it anyways.
However should be a really good game. I thought the musket guys would have been really messed up like the musket guys in M2 but they are actually really great. Movement and group formations are tight.
I do some reenacting occasionally, so I went into the Demo looking for mistakes. I found very few. I like how they immediately dress ranks without having to manually reform, but I do not like the speed as to how the load, aim and fire. It is my hope that they include the colors more in the full retail version. I noticed that when the color sergeant fell, no one stopped to pick up the colors and press on. This is lacking in a period game. And too bad they didn't include wounded animations. Seeing wounded men on the field crawling around and screaming in pain adds to the atmosphere.
They have that in the game, last time I played I saw a animation of a soldier getting shot in the stomache. You would fall on his knees and hold the place he got shot than after a couple of seconds drop to the floor. There are quite a few wounded animations.
