These are the last 2 offline achievements I need. So to anyone who already has them:

For Rolled Over, what car did you use? Where did you do it? Please be detailed.

For Finish Him, where did you do it? What kind of people did you attack and avoid? (some are better at fighting than others)

edit: I got lucky and found an utterly amazing YouTube video for the Finish Him achievement. The guy who made it added his voice to it and fully explained the finer points in getting the achievement easily. Link

edit . . . again: I got Finish Him but I didn't do it where the video I posted said to. I found another video, one that isn't really worth watching but had some good tips. The best place is Happiness Island, where the Statue of Liberty is. Go there and fight the hotdog vendors one at a time. Each one can get you 2 counters. Eventually you might get a wanted level but when I got one there weren't any cops walking around, cars couldn't get there, and only one helicopter came at a time. So I just shot the 2 cops that hang from the helicopters and kept fighting.

for the Rolled Over achievement do it at the airport(woud be the best way)and use a strong car(but fast)like an SUV<---what i used and post back here if you are haveing trouble

Do you remember which SUV that you actually used? I'd rather try with one that's proven rather than just randomly using one.

edit: GOT IT!!!!! Finally, I sat there for like 20 minutes just loading the game and flipping until I die. I used a Sentinel, the one that looks like a BMW M3. I drove from one end of the runway to the other and hit the very last yellow ramp and landed inches away from the water. Then I turned around and hit another yellow ramp and did a humongous jump and got the achievement before I hit the ground.
