No, you can use any weapon to break any part of the monsters body, (Except, gunners can't cut off tails ( Can you do it with a bow?)).

i have taken of a rathalos tail with a gun, you have to use crags to do it, and you can do it with a bow but you need to use melee attacks

most wyvens can have their face or ears smashed just keep hitting (with any weapon) in that area also ceanator and possibly hermitour can have their shells knocked off which gives you a skull shell or somthing like that in the rewards and if you chop off a tail you can carve it in the quest
