You can also build fishing docks, and fishmonger shops. They will deliver the same food ammount as your butchers just will take a lot longer to deliver because they got to bring the fish they caught all the way to the fish mongers shop, where they gotta cut it up, etc then deliver it to the grannery. The fisher has to walk all the way back to his dock, and get on the boat and start fishing again. Long process, so it shouldn't overstock your grannerys. Should just help keep it full.

meat isnt the only product that goes in. any extra products that people use to upgrade their houses(except water) goes into the granarie.(granerie?)too many jobs will overflow them, so keep enough granaries around to store food and have more buildings.and the comment about the population size equals the famrs u put is a master gamers strategy. very good use of excess materials in the game.

Heh, you're doing it wrong. There should be about 3 butcheries per each goat farm. But you can have upto five. I'd say that the 3 butcheries could supply up to 3000 persons. I had 4 butcheries and 3 bakeries supplying about 7000 persons. And the butchery limit depends upon work hours (as the goat farmer will produce more carcasses in more time.
