I have both the blossom crown and the flower sceptre, But I still can't get through into the portal at the back of remiem temple, Do I need to beat anima or something?

U need to have all of the other aeons first. Including Anima and Yojimbo. If need help finding them let me know.

Ah, there is the problem. I have all of the "spheres" required to get anima, apart from the besaid one, And no matter how hard I try, Yojimbo never seems to do Zanmato.

Yeah, you need all the aeons and you have to beat all of that lady's aeons as well.
