If you're sure it's a Golem, I use attacks on it mostly. Things I use that are good against them:

Dimeritium Bomb (superior if you have it)

Use your best attacking Silver sword and add more attack power if it has open options.

Just before closing to fight, put Elementa Oil on the sword and drink a Thunderbolt potion

For this, depending on your level it would help to have fast attack and strong attack on your character tree. Put 3 of each (or 2) if you have enough open spots plus the Greater Mutagen of the same color (red) for them (10% each if you have, or 5% if not).

I like to attack with a strong attack then try to dodge out of the way before he strikes. Continue with strong (or fast) attacks as necessary and keep dodging.

There might be a couple of other refinements depending on your character, but that's the basic scenario I use. You could also maybe drink a Full Moon or Tawny Owl if needed.

No trainer? If you just can't kill him, the trainer has an option (Numpad +) for reducing his health down to 1.

And also Quen to avoid taking too much damage. Typically Golems are resistant to all offensive signs so Quen is the way to go.
