I might consider myself getting Witcher 3.

But, I have never played the series at all whatsoever.

Is it like Skyrim in 3rd person in a way? (I'm sure I can google it, but too lazy to find info)

its big like skyrim, it has 3rd person view like skyrim but the only thing skyrim doesn't have is a rich storyline like the witcher 3 has.

Well its more like Dragon age with some dark souls instead of Skyrim for newcomers of the series.
I played the first game and beat it, 2nd one never got the chance to beat it and they combat was difficult to learn but it gives you a better experience of the series.
And just like dark souls enemies will own you unless you learn their attack/movement patterns, when to dodge&attack is all about reaction to the enemies you will be facing through out the game.
Enemies will also have weaknesses that you can exploit to kill your prey.
